DESCRIPTION: \n\nOver the years\, encapsulation has generated vast interes
 t because of its various applications. This includes protection of fragile
  ingredients\, masking of unpleasant tastes/smells\, controlled and/or tar
 geted release as well as extended shelf life. To achieve this\, near micro
 n-sized particles have been explored as potential encapsulation vessels. F
 or this presentation\, this includes three varieties\; colloidosome microc
 apsules\, coacervation microcapsules and colloidal buckets. The fabricatio
 n process of each is explained\, with corresponding results illustrated\, 
 followed by demonstration of the encapsulation capability.
