DESCRIPTION:The dimer model has attracted much attention because it is one
  of the few integrable models in statistical physics. In this talk I prese
 nt a natural generalisation of the dimer model on the hexagonal lattice\, 
 and I show that the surface tension related to the general model is strict
 ly convex. This result has important physical implications: we deduce from
  it a large deviations result with a unique minimiser. This explains how t
 he system behaves under scaling. \n
