DESCRIPTION:Emulsions are mixtures of immiscible fluids\, and as such are 
 frequently encountered in everyday life and industrial applications. In th
 is presentation\, I will first detail how\, based on observations from ind
 ustrial partners\, we have revisited our understanding of emulsion stabili
 ty and developed emulsions without surfactants. I will then discuss how th
 e physical chemistry of emulsions has contributed to the revolution in sin
 gle-cell studies in biology.
