DESCRIPTION:At present\, there is a worldwide effort to use cold atoms to 
 simulate strongly interacting electron systems in solids. This is a highly
  ambitious program with potentially enormous payoff. This program\, howeve
 r\, faces serious challenges. It requires reaching entropy regimes conside
 rably lower than those in current experiments. In addition\, to fulfill it
 s promise\,  one has to be able to deduce the properties of bulk systems e
 ntirely form the data of trapped gases. In this talk\, we shall discuss me
 thods to overcome these challenges. The scheme we proposed for deducing bu
 lk properties has been recently applied by the Paris group with success.
