DESCRIPTION:The last two decades have seen a dramatic increase in the numb
 er of scientific investigations within Chinese archaeology. The light cast
  by these new methodologies have strengthened our understanding of Chinese
  prehistory both in theory and in practice. This talk considers the constr
 uction of the Neolithic in relation to diachronic changes in subsistence p
 ractice. Three key factors will be discussed in turn: the beginning of mil
 let domestication in northern Eurasia\; cultural changes in relation to fo
 od production and consumption in prehistory\; and\, the globalisation of s
 tarchy crops in late prehistory.
