 ome a common item in many households around the world. The mechanisms invo
 lved in the cleaning of foodstuffs are often poorly- if at all- understood
 . This results in high water\, energy and chemical consumption during clea
 ning. This applies not only to dishwashers\, but also to large scale produ
 ction of foodstuffs. This talk discusses the ways that a greater understan
 ding of how to clean help overcome these problems.
