  I will consider two fermionic chains at different densities  joined toget
 her and evolved unitarily. I will present many exact results  concerning t
 he large-time limit of correlation functions and the Loschmidt echo.  I wi
 ll show that this type of quench is deeply related\, via analytic  continu
 ation in imaginary time\, to the arctic curve phenomena in statistical  me
 chanics: interfaces separating fluctuating and frozen regions\, a celebrat
 ed  example of which is the arctic circle theorem for dimers on the aztec
