DESCRIPTION:Most new materials are created by an empirical process of disc
 overy rather than by design. This applies particularly to soft materials s
 uch as emulsions\, liquid crystals and gels\, which are generally metastab
 le:  their properties depend on process history\, not just thermodynamics.
  I shall give examples of how theory and simulations can explore the formu
 lation principles for such materials\, with the long-term goal of designin
 g new materials from scratch.
