Abstract
Over the years, encapsulation has generated vast interest because of its various applications. This includes protection of fragile ingredients, masking of unpleasant tastes/smells, controlled and/or targeted release as well as extended shelf life. To achieve this, near micron-sized particles have been explored as potential encapsulation vessels. For this presentation, this includes three varieties; colloidosome microcapsules, coacervation microcapsules and colloidal buckets. The fabrication process of each is explained, with corresponding results illustrated, followed by demonstration of the encapsulation capability.
