Abstract
The dimer model has attracted much attention because it is one of the few integrable models in statistical physics. In this talk I present a natural generalisation of the dimer model on the hexagonal lattice, and I show that the surface tension related to the general model is strictly convex. This result has important physical implications: we deduce from it a large deviations result with a unique minimiser. This explains how the system behaves under scaling.
