The Physics of beer tapping and others topics in mass transfer

Abstract
When a freshly opened beer bottle is impacted on its mouth by an object (usually another bottle), it spills the liquid inside in the form of foam within a matter of a second. The detailed physical explanation of this phenomenon involves several topics in Fluid Mechanics, and in particular in mass transfer, which are of great importance to describe other natural and industrial flows: cavitation, bubble collapse, mass transfer in bubbly flows, autocatalytic plumes, âĻ We will use the explanation of the beer tapping prank to explore several of these topics, pointing out the connections to other aspects of natural sciences.
